The BEST Balanced Mac & Cheese

INGREDIENTS

  • 8 oz whole wheat pasta, dried
  • 1 c cottage cheese
  • 1 ½ c sharp cheddar cheese, shredded
  • 1 c high protein milk, or milk of choice
  • ½ c whey powder, unflavored
  • 1 Tbsp cornstarch
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp mustard powder
  • 1/3 tsp paprika
  • ¼ tsp pepper

INSTRUCTIONS

  1. Cook pasta according to the package directions.
  2. While pasta cooks, add all remaining ingredients to a blender or food processor fitted with a metal blade. Process until smooth.
  3. Pour cheese mixture into a large saucepan and cook over medium-low heat for 8-10 mins, whisking frequently, until the cheese sauce is slightly thickened.
  4. Stir pasta into sauce to combine.
