The BEST Balanced Mac & Cheese

INGREDIENTS
- 8 oz whole wheat pasta, dried
- 1 c cottage cheese
- 1 ½ c sharp cheddar cheese, shredded
- 1 c high protein milk, or milk of choice
- ½ c whey powder, unflavored
- 1 Tbsp cornstarch
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp mustard powder
- 1/3 tsp paprika
- ¼ tsp pepper
INSTRUCTIONS
- Cook pasta according to the package directions.
- While pasta cooks, add all remaining ingredients to a blender or food processor fitted with a metal blade. Process until smooth.
- Pour cheese mixture into a large saucepan and cook over medium-low heat for 8-10 mins, whisking frequently, until the cheese sauce is slightly thickened.
- Stir pasta into sauce to combine.
