Weeknight Shepherd’s Pie

INGREDIENTS
- 1 T oil, canola
- ½ onion, chopped
- 1 lb ground beef, 93%
- 1 T Worcestershire sauce
- 2 tsp garlic powder
- ½ tsp salt
- ¼ tsp pepper
- ½ c peas, frozen or canned
- ½ c corn, frozen or canned
- 1 pkg (~1 oz) brown gravy mix, low-sodium
- 4 c mashed potatoes, prepared
- 8 oz cheddar cheese, low-fat, shredded
INSTRUCTIONS
- Preheat oven to 350 degrees F.
- In a large pan over medium heat, add oil and sauté onions until translucent. Add ground beef with Worcestershire, garlic, salt and pepper. Cook until browned and crumbly.
- Mix in peas and corn and cook for 3 mins.
- Add gravy mix and ¾ cup water. Increase heat to medium-high and cook while stirring continuously until gravy is thickened, approx. 3 mins.
- Transfer beef mixture to 9x13 baking dish in an even layer. Top with potatoes, and then with cheese.
- Bake in preheated over for 15 mins or until cheese is melted.
