Ingredients
- 2 cups 1% milk
- 1 cup uncooked regular grits
- ½ teaspoon each salt and pepper
- 2 cups Velveeta 2% cheese
- 1½ lbs. shredded smoked lean beef brisket
- 2 cups prepared coleslaw
- ¾ cup prepared barbecue sauce
- *Purchase extra lean brisket, sauce and coleslaw from your favorite BBQ restaurant! We used HEB fully cooked pre-sliced mequite smoked lean brisket in the nutrition information
Instructions
- Bring milk and water to a low boil in a large saucepan over medium heat, stirring occasionally. Gradually whisk in grits and salt; return to a boil. Cover, reduce heat to low, and simmer, stirring occasionally, 5 to 7 minutes or until thickened. Remove from heat, and stir in cheese until blended.
- Layer grits, brisket and coleslaw evenly in 16 martini glasses; drizzle with barbecue sauce. Serve immediately.
