Caprese Bowl

Ingredients
  • 2 packages Central Market Quick Heat Quinoa & Bulgur, prepared (or 4 cups cooked grain of choice)
  • 1 pint grape tomatoes, halved
  • 4 oz cooked chicken or firm tofu
  • 4 oz fresh mozzarella, cut into bite-size
  • 2 Tbsp fresh basil, chopped
  • 2 Tbsp extra virgin olive oil
  • Drizzle of balsamic vinegar or lemon juice
  • Pinch of salt, pepper, and Italian seasoning
Instructions
  1. Mix all ingredients in a large bowl. Portion into 4 individual bowls.
  2. Serve and enjoy!
