1½ cups KIND granola (Oats & Honey is my favorite)
¾ cup dried fruit (chopped dates, raisins, apricots, etc), optional
½ cup chopped nuts, optional
Instructions
Preheat oven to 350 degrees F and line a cookie sheet with parchment paper. In a large mixing bowl, beat together butter and sugars until fluffy. Add vanilla and eggs, and mix until well-combined.
In a separate bowl mix together flours, salt, baking soda, baking powder and spices until blended. Gradually add flour mixture to butter mixture, and mix until combined. Fold in oats, granola, dried fruit and nuts until mixed.
Portion into tablespoon-sized balls, and place 2-inches apart onto the cookie sheet. Bake for 9-11 minutes, or until edges are golden brown. Allow to cook for 1 minute on cookie sheet before removing to a cooling rack. Repeat the process until all cookies are baked.
To make gluten-free, swap out the wheat flour for oat flour.
