In large bowl, combine tuna, eggs, potato, onion, bell pepper and Sriracha sauce. Mix together and form into 2” wide, 1” thick patties to make a total of 12 patties; set aside.
Heat grill to medium-high heat. Lightly brush grill surface with oil to prevent sticking. Sear patties 3-5 minutes, per side.
Optional: Top with Sriracha sauce (recipe below) and sliced cucumber.
Sauce:
Combine Sriracha and mayo in a small bowl. Mix till well blended.
Serve on top of Sriracha Tuna Patties & top with sliced cucumber.
