Orange-Basil Grilled Salmon

Ingredients
  • 2 teaspoon grated orange rind
  • ΒΌ cup fresh orange juice
  • 2 tablespoon fresh lemon juice
  • 2 tablespoon extra-virgin olive oil
  • ⅓ cup chopped fresh basil
  • 6 (5oz) salmon fillets
Instructions
  1. Combine first 5 ingredients in a large shallow dish or heavy-duty, zip-top plastic bag; add salmon. Cover or seal; chill 2 hours.
  2. Remove salmon from marinade and discard plastic bag. Brush grill with oil and place salmon skin side up over medium hot coals. Cover with grill lid and cook about 7-8 minutes; turn and continue cooking an additional 3-4 minutes with skin side down to desired degree of doneness.
  3. Remove from grill and serve.
