Cheesecake Filled Strawberries

- 4 ounces low-fat cream cheese
- ¼ cup confectioners’ sugar
- 1 teaspoons vanilla extract
- 12 large strawberries
- 2 tablespoons graham cracker crumbs
- 2 ounces semisweet chocolate
- Line baking sheet with waxed paper.
- Beat together cream cheese, confectioners’ sugar and vanilla extract in a bowl until smooth.
- With paring knife, cut off strawberry stems. On the stem side, cut around the inside of the strawberry to hollow out the center.
- Spoon mixture into a piping bag with a round tip. Pipe about 1 tablespoon of cream cheese filling into each strawberry.
- Sprinkle graham cracker crumbs over top of strawberries.
- Melt chocolate in microwave-safe bowl in 30 second intervals for 2-3 minutes, stirring after each interval.
- Dip the tips of strawberries into melted chocolate and place on prepared baking sheet. Refrigerate until set.
