Hearty Lentil Soup

- 2 celery ribs, thinly sliced
- 1 medium onion, chopped
- 1 garlic clove, minced
- 2 tablespoons olive oil
- 6 cups water
- 1 (28 oz) can diced tomatoes
- ¾ cup dry lentils, rinsed
- ¾ cup pearl barley
- 2 cubes bouillon, any flavor
- ½ teaspoon dried oregano
- ¼ teaspoon pepper
- 1 cup carrots, thinly sliced
- 1 cup reduced-fat Swiss Cheese shreds (optional)
- 1 lb. extra firm tofu or ground turkey, browned (optional)
- In a large pot, sauté celery, onion and garlic in olive oil until tender. Add water, tomatoes (with liquid), lentils, barley, bouillon, oregano, and pepper; bring to a boil. Reduce heat; cover and simmer for 40 minutes or until lentils and barley are almost tender.
- Add carrots and tofu or browned ground turkey (optional); simmer for an additional 30 minutes or until carrots, lentils, and barley are tender.
- Sprinkle each serving with cheese (optional), if desired.
