Easy Skillet Tacos

Ingredients
1 pound extra lean ground beef
½ cup finely chopped onion
1 tablespoon chili powder
1½ teaspoons groun cumin
1 teaspoon salt
1 (15 oz) can pinto beans, rinsed and drained
1 (8 oz) can tomato sauce
¾ cup water
½ cup salsa
1½ cups shredded 2% milk Cheddar cheese shreds
1 tablespoon chopped fresh cilantro
12 corn tortillas
Additional toppings: shredded lettuce, diced tomato,
avocado, salsa & jalapenos, optional
Instructions
In large skillet, cook ground beef over medium-high heat, stirring
until beef crumbles and is no longer pink. Add onion, chili powder,
cumin and salt. Cook over low heat, stirring to prevent sticking,
for about 15 minutes.
Stir in beans, tomato sauce, water, and salsa. Mash pinto beans
in skillet with a fork, leaving some beans whole. Bring to a boil;
reduce heat and simmer uncovered for 10 minutes or until liquid is
reduced.
Top evenly with cheese and cilantro. Cover, turn off heat, and
let stand 5 minutes or until cheese is melted. Serve with corn
tortillas and desired toppings.
