Strawberry Mediterranean Salad
 
Ingredients
  • ½ pint fresh strawberries, sliced
  • 1 cup fresh mushrooms, sliced
  • ½ cup red bell pepper, julienne sliced
  • ½ cup walnuts, chopped
  • ⅓ cup feta cheese, crumbled
  • ¼ cup green onion, sliced
  • 1 (10 oz) package fresh baby spinach

  • ⅓ cup olive oil
  • ⅓ cup canola oil
  • ⅓ cup balsamic vinegar
  • 1 tablespoon water
  • 1 teaspoon salt
  • pepper to taste
Instructions
  1. Combine salad ingredients except feta cheese and walnuts; set aside.
  2. Combine dressing ingredients in blender container; blend until smooth.
  3. Pour over salad, toss, and set aside at room temperature for 5-10 minutes.
  4. Add feta cheese and walnuts as topping. Sprinkle with pepper to taste.
