Bring first 5 ingredients to a boil in a large saucepan.
Saute onion in hot oil in a large saucepan over medium high until translucent.
Add rice, and cook, stirring constantly, 2 minutes. Reduce heat to medium; add ½ cup hot broth mixture. Cook, stirring constantly, until liquid is absorbed. Repeat with remaining hot broth mixture, ½ cup at a time. Cooking time is 20 to 30 minutes.
Remove from heat, stir in butter and cheese.
