Pumpkin Squares

  • ½ cup brown sugar
  • ½ cup quick oats
  • ½ cup butter

  • 1 (16 oz) can pumpkin
  • 1 (13.5 oz) can evaporated skim milk
  • ¾ cup sugar
  • 2 eggs
  • ½ teaspoon each salt and ground ginger
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground cloves

  • ½ cup brown sugar
  • 2 tablespoons butter

  2. Combine ingredients in small mixing bowl; mix until crumbly. Press into ungreased 13X9-inch baking dish. Bake at 350 degrees for 20 minutes. During bake time, prepare filling.
  3. Filling:
  4. Combine ingredients in large mixing bowl; beat well. Pour pumpkin mixture into baked crust and bake at 350 degrees for 20 minutes.
  5. Remove from oven and sprinkle with topping.
  6. Topping:
  7. Stir together ingredients. Sprinkle over filling.
  8. Return to oven for 15-20 minutes until filling is set.
  9. Cool and cut into squares. Serve with whipped cream, if desired.
