Ingredients
- 4-6 boneless skinless thin-sliced chicken breasts
- 4 cloves garlic, minced
- 3 T butter
- 2 T lemon juice
- 1 tsp fresh thyme leaves (or ½ tsp dried)
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Heat oven to 450°F.
- Add butter to a large baking dish. While preheating, place dish in oven until butter is melted.
- Remove from oven and whisk in garlic, lemon juice, and thyme. Place the chicken breasts on top in an even layer. Use a pastry brush to brush the butter mixture all over the chicken breasts until they are completely coated on both sides. Then sprinkle each chicken breast evenly with salt and pepper.
- Bake for 5 minutes. Then remove the dish from the oven and brush the chicken again thoroughly with the butter mixture. Bake again for 5 minutes, remove and brush. Bake again for 5-8* minutes, or until the chicken is cooked through. *If you prefer the chicken to be browned and crispier on top, turn the broiler on high for the final 3-5. Keep a close eye on the chicken so that it doesn’t overcook or burn.
- Once cooked, remove the dish from the oven and brush the chicken with the butter mixture once more. Loosely cover the pan with aluminum foil, and let the chicken rest for at least 5-10 minutes. Serve immediately or refrigerate in a sealed container for up to 3 days, or freeze for up to 3 months.
