Ingredients
Salad:
- 6-8 cups baby spinach
- 1 large ripe mango, pitted, peeled and sliced
- 1 cup strawberries, sliced
- ½ English cucumber, peeled and sliced
- 1 small avocado, pitted, peeled and diced
- ½ small red onion, thinly sliced
Cilantro-Lime Dressing:
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons freshly squeezed lime juice (about 1 lime)
- 1-2 tablespoons fresh cilantro, chopped
- 1 clove garlic, minced
- ½ teaspoon honey
- ⅛ teaspoon chili powder
- ⅛ teaspoon ground cumin
- Pinch of salt and freshly ground black pepper, to taste
Instructions
- In a large salad bowl or four individual bowls, place spinach and top with sliced mango, strawberries, cucumbers, avocado and red onion.
- In a small bowl, whisk together olive oil, lime juice, cilantro, garlic, honey, chili powder and cumin. Season with salt and freshly ground black pepper, to taste.
- Drizzle cilantro-lime dressing over the salad and serve immediately,
