Smothered Swiss Burgers with Fire-Roasted Tomatoes

Ingredients
  • 1-1/2 pounds lean ground sirloin
  • 1 egg, lightly beaten
  • 1 teaspoon salt
  • ½ teaspoon fresh cracked black pepper
  • 1 medium onion, diced
  • 2 (14.5 oz) cans fire-roasted diced tomatoes
  • 1 teaspoon beef base or bouillon granules
  • 6 (1 oz) slices Swiss cheese, reduced-fat
  • ¼ cup chopped fresh basil
Instructions
  1. Stir together ground beef, egg, salt and pepper in large bowl. Shape into 6 patties.
  2. Place patties in large skillet over medium-high heat for 4 to 5 minutes of each side or until browned. Remove from skillet and set aside.
  3. In same skillet, saute onion in hot pan drippings for about 2 minutes. Add tomatoes, bouillon and ½ cup water. Cook, stirring occasionally, for 3 to 4 minutes or until bubbly.
  4. Return patties to skillet; spoon tomato mixture over patties cover and simmer over low heat for about 15 minutes. Uncover and cook an additional 5 minutes to allow tomato mixture to reduce and thicken. Place 1 slice of cheese on each patty. Cover and cook for 2 minutes or until cheese melts. Sprinkle with basil and serve.
