Grilled (or Roasted) Pork Chops with Peaches

Ingredients
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • ½ teaspoon black pepper
  • ¼ teaspoon allspice
  • ¼ teaspoon cardamom
  • 4 (6 oz.) pork chops (bone-in)
  • 1 large red onion, sliced into rings
  • 4 small peaches or nectarines, sliced
  • 2 tablespoons honey
  • ¼ cup fresh basil, sliced
Instructions
To Grill:
  1. Preheat grill to medium high heat (400-450 degrees F).
  2. In a small bowl, combine olive oil, salt, cumin, black pepper, allspice, and cardamom to form a paste. Spread half of the mixture over the pork chops, reserving the rest for later.
  3. In a large bowl, toss together onions and the remaining spice mixture. Place onions in the center of a large, thick piece of aluminum foil. Fold the edges together to form a packet and set aside. Add peaches and honey to the mixing bowl and toss together.
  4. Place the packet of onions and the pork chops on the grill at the same time. Cook pork chops for 3-5 minutes per side. Remove both the onions and pork chops to a cookie sheet. While the pork chops rest, carefully open the packet of onions and add the peaches. Reduce the heat to 350 degrees F, and return the packet to the grill for an additional 5-7 minutes, until peaches are slightly soft.
  5. To serve the pork chops, top each with ¼th of the grilled peaches and onions. Top with fresh basil and enjoy!
To Roast:
  1. Preheat oven to 425 degrees F.
  2. In a small bowl, combine olive oil, salt, cumin, black pepper, allspice, and cardamom to form a paste. Spread half of the mixture over the pork chops, reserving the rest for later.
  3. In a large bowl, toss together onions and the remaining spice mixture. Place pork chops and onions on a large baking sheet, ensuring everything is evenly dispersed. Place in oven to cook for 10-12 minutes.
  4. Meanwhile, add peaches and honey to the mixing bowl and toss together. Remove baking sheet from oven and top with peaches. Return to oven for an additional 5-7 minutes, until peaches are browned.
  5. To serve the pork chops, top each with ¼th of the grilled peaches and onions. Top with fresh basil and enjoy!
