Ingredients
For the Chicken:
- 1 jalapeno, minced (seeds removed)
- 2 cups cilantro, roughly chopped
- 1 clove garlic, minced
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon salt
- 6 boneless, skinless chicken breasts (approx. 2 pounds)
For the Salsa:
- 1 pound strawberries, diced
- 1 mango, diced
- ½ cup red onion, diced
- ¼ cup cilantro, chopped
- 1 avocado, chopped
- 1 tablespoon jalapeno, diced (seeds removed)
- ½ teaspoon salt
- 1 lime, juiced
Instructions
For the Chicken:
- Place jalapeno, cilantro, garlic, lime juice, olive oil, cumin and salt in a small food processor. Blend to a pesto-like consistency. Measure out ¼ cup, and reserve in the refrigerator for later.
- Pour the remaining sauce over the chicken breasts, and toss to fully coat each chicken breast. Cover and refrigerate for 1 hour.
- Preheat grill to 350-400 degrees F. Place chicken breasts on grill, and grill for about 6 minutes per side, or until internal temperature reaches 165 degrees F. Remove from grill and brush with reserved sauce.
For the Salsa:
- In a large bowl, combine all ingredients. Gently toss to combine. (For best flavor, allow salsa to sit for 20 minutes before serving). Enjoy immediately over the grilled chicken!
