Apple Cake with Brown Sugar Glaze
Ingredients
- 2 cups sugar
- 1 cup canola oil
- 3 large eggs
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 3 cups peeled, finely chopped cooking apples
- ½ cup chopped pecans
Instructions
- Beat first 3 ingredients at medium speed of an electric mixer until creamy.
- Combine flour and next 3 ingredients; add to sugar mixture, beating well.
- Stir in apples and pecans.
- Pour batter into greased and floured 12-cup Bundt pan.
- Bake at 350 degrees for 1 hour and 20 minutes or until wooden pick inserted in center comes out clean.
- Cool in pan on wire rack 10 to 15 minutes; remove from pan, and let cool completely on wire rack.
- Drizzle Brown Sugar Glaze over cake.

Directions for Glaze
1. Combine all ingredients in a small saucepan; cook over high heat, stirring
constantly, 2 minutes or until butter melts.
