Apricot Stuffed Pork Chops
Ingredients
- 1 (15.25 oz) can apricot halves, drained and chopped
- 1 cup unseasoned croutons
- ⅓ cup coarsely chopped walnuts
- 1 (1 oz) envelope onion soup mix
- 2 tablespoons margarine, melted
- 4 (1½ - inch thick) boneless pork loin chops, trimmed and cut with pockets
- ½ cup apricot preserves
- 1 tablespoon hot water
Instructions
- Combine first 5 ingredients. Stuff about ⅓ cup apricot mixture into each pocket of pork chops; secure openings with wooden picks.
- Grill chops, covered with grill lid, over medium coals for 16 minutes, turning once. Combine apricot preserves and hot water, stirring well; brush with apricot mixture, grill 3 more minutes.
