Ingredients
Caramelized Onions:
- 1 tablespoon olive oil
- 1 medium red onion, sliced
- 1 large white onion, sliced
- 1 tsp paprika
- ½ tsp kosher coarse salt
- 1 tablespoons golden balsamic vinegar
Flatbread Assembly:
- 1 pound top sirloin
- Kosher salt & fresh cracked pepper, to taste
- 1 tablespoon canola oil
- 1 (12-inch) frozen whole wheat pizza crust
- 3 ounces baby arugula
- ½ ounce shaved Parmesan or Pecorino Romano cheese
- 1 ½ tablespoons golden balsamic vinegar
- 1 ½ tablespoons olive oil
Instructions
- Heat olive oil in a non-stick skillet over medium-low heat. Add onions, paprika, salt, & 1 tablespoon balsamic vinegar. Cook over medium-low heat until onions are tender, transparent, & slightly brown, about 30-35 minutes, stirring occasionally.
- Meanwhile, heat grill to medium-high heat. Season sirloin with salt & pepper, to taste. Cook steaks 3-4 minutes per side for medium rare (or cook longer to your desired likeness). Remove from grill and allow to rest 10 minutes before slicing into strips.
- While steaks rest, lightly brush grill-top with canola oil. Place pizza dough on grill & cook 3-4 minutes per side, or until lightly charred & no longer doughy. Remove from grill.
- Spread out caramelized onions & arugula on top of grilled flatbread. Arrange sliced sirloin & shaved Parmesan cheese on top. Drizzle with olive oil & balsamic vinegar. Cut into squares & enjoy immediately!
