For many people, any holiday is an excuse to over-indulge, but isn’t it high time we get rid of that toxic mindset?
Easter is a holiday where children and adults alike are tempted with high doses of sugar. If you have children or grandchildren, try supplementing their Easter baskets with other items such as toys rather than stuffing them full of candy. Pile their baskets high with things that are fun but useful such as sandals, sunglasses, bubbles, goggles, bug-catching toys and jump ropes. Strategically choose toys you think will encourage the kids to get active and use their minds instead of sitting with a phone or iPad playing video games. Spring weather is perfect for outdoor activities. Plan a family Easter egg hunt or go for an after dinner walk.
In order to practice a healthy lifestyle, it is important to carefully consider the food choices we make. To lighten up the Easter meal, why not prepare a lean ham and serve moderate portions. Replace heavily sauced, calorie laden traditional Easter dishes with fresh roasted vegetables, a crisp citrus spinach salad. For a light dessert idea, one of my favorites is pavlova, a light meringue based dessert, served with an assortment of fresh berries. Easter is always a special time to spend with family and friends, but most importantly it is a time for us to reflect on the priceless gift we’ve been given in Jesus Christ. It is my hope and prayer that as you celebrate Easter this year, you will feel the peace, presence and joy that only He can give.
Today’s recipe is Spinach Madeleine, a spinach dish that is deceptively rich and creamy and a perfect complement to the ham and fresh tomato salad on the menu.
