Thai Beef Salad
Ingredients
- 1 pound boneless sirloin steak
- 2 green onions, chopped
- 1 cup chopped cilantro
- 1 cup chopped mint leaves
- 1 cup fresh lime juice
- ⅓ cup fish sauce
- 1 tablespoon sweet chili sauce
- ⅓ cup sugar
- 1 head leaf or Bibb lettuce leaves, rinsed, dried and torn into bite-sized pieces
- English cucumber, diced
- 1 pint cherry tomatoes, halved
- cup chopped peanuts
Instructions
- Cook steak on grill over high heat for approximately 4 to 6 minutes on each side,
- until it is cooked medium (don’t overcook!). Remove from heat and slice into thin strips; set aside.
- In large bowl, stir together green onions, cilantro, mint leaves, lime juice, fish sauce,
- chili sauce and sugar until well blended and sugar is dissolved. Add meat and its juices to the sauce and refrigerate, tightly covered, for at least 3 hours.
- Place lettuce in salad bowl. Arrange diced cucumber on top of lettuce, and then pour meat and sauce over all. Top with cherry tomatoes and peanuts; serve immediately.
