Cowboy Beef & Beans
Ingredients
- 3 pound rump roast, trimmed of all visible fat
- 1 teaspoon garlic salt
- ½ teaspoon pepper
- 2 cups dried pinto beans
- 1 cup water
- 1 (10.75 oz)can low sodium beef broth
- 1 (10 oz)can Ro-Tel
- 1 (8 oz) can tomato sauce
- 1 (4.5 oz)can green chilies
- 1 onion, chopped
Instructions
- Sprinkle roast with garlic salt and pepper.
- Put 2 cups dry pinto beans around roast. Add remaining ingredients.
- Cover and bake at 250 degrees for 10 to 12 hours, or place roast in crockpot, add remaining ingredients and cook on low overnight or for 8-10 hours
