- 4 cups baby spinach
- 1 Fuji apple, sliced thinly
- 1 Granny Smith apple, sliced thinly
- 4 slices thick-cut bacon, cooked and chopped
- 2 ounces feta cheese crumbles
- ¼ cup chopped pecans
- 3 tablespoons olive oil
- 3 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 2 tablespoons pure maple syrup
- Dash of cinnamon
- Salt and pepper, to taste
1. Divide spinach onto 4 plates. Divide and artistically layer each salad with sliced apples, bacon, feta and pecans.
2. In a blender, pulse together olive oil, mustard, vinegar, syrup, cinnamon and salt and pepper until well-blended.
3. Drizzle dressing over each salad. Serve and enjoy immediately.
*Serving Tip: For a quick and complete meal, add shredded chicken.
