Grilled Sweet Potato Packets
Ingredients
- 2 large sweet potatoes, peeled, halved lengthwise, and cut ¼ inch thick
- 1 red onion, cut into ½ inch wedges
- 3 tablespoons olive oil
- 2 tablespoons ketchup
- 2 teaspoons fresh thyme, chopped
- 2 teaspoons chili powder
- 2 teaspoons salt
- 1 teaspoon freshly cracked black pepper
- Lime wedge, optional
Instructions
- In large bowl, combine the sweet potato slices, onion wedges, olive oil, ketchup, thyme, chili powder, salt and pepper. Toss gently to coat.
- Lay out six 12 X 12 sheets of heavy duty foil on the counter. Distribute the potato mixture evenly amount the sheets, mounding it in the center of each sheet. Fold the top edge of foil down over the potato mixture. Crimp edges to form tight seal.
- Lay the foil packet on the grill rack, over indirect heat (not directly over coals or gas flame), close lid and cook until potatoes are tender when pierced with a knife, about 30 minutes. Remove packets from grill and let cool for 10 minutes. Serve with lime wedges, if desired.
