Garden Quinoa Patties

Ingredients
- 1 T cooking oil
- 3 eggs, beaten
- 1 pkg Quick Heat Quinoa (approx. 2 cups)
- ½ c breadcrumbs
- ¼ c parmesan cheese, grated
- ¼ c onion, minced
- ¼ c carrot, minced
- ¼ c zucchini, minced
- 2 T fresh parsley, chopped
- 2 cloves garlic, minced
- ½ t salt
- ¼ t lemon pepper
Instructions
- Heat oil in a large skillet over medium heat.
- In a large bowl, beat eggs. Add quinoa along with the rest of ingredients and mix until combined. Let mixture rest for a few minutes in order to allow breadcrumbs to soak up moisture.
- Form 2-inch patties*
- Place patties in heated skillet. Cover and cook for 7-10 minutes or until the bottoms are deeply browned. Carefully flip patties and cook an additional 5 minutes. Remove patties from skillet at let cool a few minutes before serving.
Notes
*If mixture is too wet to form patties, add more breadcrumb. Alternatively, if mixture crumbles, add water a few drops at a time.
