Crockpot Cowboy Casserole

Ingredients
  • 1 lb ground beef
  • ¼ cup diced onion
  • ½ tsp pepper
  • 1 tsp salt
  • 4-5 small red potatoes, sliced thin
  • 1 can of cream of mushroom soup
  • 1 can of diced tomatoes with liquid
  • 1 cup canned corn, drained
  • 1 can dark red kidney beans, drained
  • 1 cup of shredded cheddar cheese
Instructions
  1. Brown the ground beef in a large skillet over medium high heat until thoroughly cooked
  2. Add the ground beef and all ingredients except the cheddar cheese to a large crockpot
  3. Cook on low for 6-7 hours or on high for 4-5 hours
  4. After it has cooked, remove the lid and add the cheddar cheese and continue to cook for 30 minutes before serving
