Crockpot Cowboy Casserole

Ingredients
- 1 lb ground beef
- ¼ cup diced onion
- ½ tsp pepper
- 1 tsp salt
- 4-5 small red potatoes, sliced thin
- 1 can of cream of mushroom soup
- 1 can of diced tomatoes with liquid
- 1 cup canned corn, drained
- 1 can dark red kidney beans, drained
- 1 cup of shredded cheddar cheese
Instructions
- Brown the ground beef in a large skillet over medium high heat until thoroughly cooked
- Add the ground beef and all ingredients except the cheddar cheese to a large crockpot
- Cook on low for 6-7 hours or on high for 4-5 hours
- After it has cooked, remove the lid and add the cheddar cheese and continue to cook for 30 minutes before serving
