Grilled Hawaiian BBQ Chicken in Foil Packets

Ingredients
- 4 boneless skinless chicken breasts (about 2 pounds)
- ¾ cup barbecue sauce
- 1 (20-ounce) can pineapple slices, in juice
- 2 teaspoons low-sodium soy sauce
- 1 teaspoon minced garlic
- 1 red bell pepper, sliced
- 1 medium zucchini, halved and sliced
- 1 small red onion, sliced
- 1 bunch cilantro, for garnish
Instructions
- Set grill to medium heat. Cut 4 sheets of heavy duty aluminum foil large enough to wrap chicken and veggies inside. In each packet, place chicken in the center, evenly divide the veggies, and add 2 pineapple slices.
- In a small bowl, whisk together barbecue sauce, half the juice from the can of pineapple slices (about ¾ cup), soy sauce, and garlic. Add 2-3 tablespoons of sauce on the chicken and reserve about ¼ cup for later. Wrap up the foil into closed packets.
- Place chicken packets on grill and cook for about 15 minutes, flipping halfway through.
- To serve, carefully open packets, baste with reserve sauce and top with fresh cilantro.
