Ingredients
- 1 bunch green onions, chopped
- 1 (2-inch) piece ginger, peeled
- 4 cloves garlic
- ¼ teaspoon black pepper
- 2 tablespoons sugar
- ¼ cup canola oil
- ½ cup fresh lime juice
- ¾ cup soy sauce
- 2½ pounds large shrimp, peeled with tails attached
- Fresh cilantro, for garnish
Instructions
- Combine green onions, ginger, garlic, pepper, sugar, canola oil, lime juice and soy sauce in a blender. Blend until smooth. Reserve about ¼th of the marinade for later.
- Place shrimp in a large bowl with remaining marinade. Toss to coat shrimp evenly, and cover. Place in the refrigerator to marinate for 45-60 minutes, while you prepare the rest of the meal.
- Heat grill to medium-high heat (400-450 degrees F). While the grill heats, thread shrimp onto skewers and discard the marinade. Place skewers directly on the grill, and grill for about 2-3 minutes per side, or until thoroughly pink. Remove from grill and lightly drizzle with reserved marinade. Garnish with cilantro and enjoy!
