Ingredients
- 2 teaspoons olive oil, divided
- 2 red pears, cored & sliced thinly
- 1 tablespoon pure maple syrup
- 4 (4-ounce) tenderloin filets (about 1 inch thick)
- Salt & black pepper, to taste
- 4 ounces reduced fat blue cheese crumbles
Instructions
- Preheat broiler to high.
- Heat 1 teaspoon olive oil in large non-stick skillet, over medium heat. Once heated, add in pears & sauté 5 minutes. Add in maple syrup & cook an additional 5-10 minutes, or until pears are lightly caramelized. Set aside.
- Meanwhile, trim beef medallions of excess fat & dress with remaining 1 teaspoon olive oil, salt & pepper. Place steaks on a foil-lined broiler pan coated with cooking spray. Broil steaks 5 inches from the heat for 4 minutes, & turn over. Broil for 4-5 minutes more. Remove from oven & sprinkle steaks with blue cheese crumbles. Return steaks to oven & broil an additional 1-2 minutes, or until cheese is bubbly.
- Serve steak alongside caramelized pears, on a salad or with whole grain crusty bread.
