Apple Salad with Pecan & Feta Crumbles

Ingredients
- 2 heads red leaf lettuce, torn
- 1 apple, chopped
- ½ pound reduced fat feta cheese, crumbled
- SPICED PECANS:
- ¾ cup pecan pieces
- 1 teaspoon cayenne pepper
- 3 tablespoons melted butter
- Dash hot pepper sauce
- DRESSING:
- 2 tablespoons wine vinegar
- 1 tablespoon + 1 teaspoon Dijon mustard
- ⅓ cup olive oil
- Fresh cracked black pepper, optional
Instructions
- In large bowl, combine leaf lettuce and apple. Top with feta cheese crumbles and place in refrigerator.
- To prepare spiced pecans: in small bowl, combine pecans, cayenne pepper, melted butter and pepper sauce. Spread on ungreased baking sheet and bake for 10 minutes at 350 degrees – watch carefully to avoid burning. Set aside to cool.
- To prepare dressing: In small bowl, whisk together vinegar, mustard and gradually add oil. Add pepper to taste.
- Just before serving, toss salad with dressing and pecans.
