Flounder a la Florentine
Ingredients
- ½ cup finely chopped onion
- 2 cloves garlic, minced
- 1 (10 oz) package frozen chopped spinach, thawed and well-drained
- 4 (5 oz) ½-inch thick flounder fillets
- 2 teaspoons lemon juice
- 1 teaspoon Creole seasoning
- ¼ cup Italian-seasoned breadcrumbs
- 2 tablespoons Parmesan cheese shreds
- 2 tablespoons butter, melted
Instructions
- Stir onion and garlic into chopped spinach.
- Coat dull side of 4 (12-inch) squares of heavy-duty aluminum foil with cooking spray. Place a fillet in the center of each square; brush each fillet evenly with lemon juice, and sprinkle with Creole seasoning.
- Spoon spinach mixture evenly over fillets.
- Combine breadcrumbs, Parmesan cheese and butter; spoon evenly over spinach mixture, pressing gently. Fold foil to seal.
- Bake at 350 degrees for 30 minutes or until fish flakes easily with fork.
