Creamy Chicken & Mushrooms
Ingredients
- 2 tablespoons butter
- 4 skinless, boneless chicken breast halves
- 1½ cups sliced mushrooms
- 1 small onion, sliced
- 1 clove garlic, minced
- 1 (10.75 oz) can Healthy Request Cream of Mushroom Soup
- ½ cup low-fat milk
- 2 tablespoons dry sherry
- ¼ teaspoon each salt and white pepper
Instructions
- In large skillet, heat 1 tablespoon butter. Lightly brown chicken breasts on each side; remove from skillet and set aside.
- In same skillet, add additional 1 tablespoon butter, cook mushrooms and onion with garlic until tender; stirring often.
- Add remaining ingredients. Bring to a boil and return chicken to skillet. Reduce heat, cover and cook over low heat for 5 to 10 minutes or until chicken is cooked through.
