Creamy Chicken & Mushrooms

Ingredients
  • 2 tablespoons butter
  • 4 skinless, boneless chicken breast halves
  • 1½ cups sliced mushrooms
  • 1 small onion, sliced
  • 1 clove garlic, minced
  • 1 (10.75 oz) can Healthy Request Cream of Mushroom Soup
  • ½ cup low-fat milk
  • 2 tablespoons dry sherry
  • ¼ teaspoon each salt and white pepper
Instructions
  1. In large skillet, heat 1 tablespoon butter. Lightly brown chicken breasts on each side; remove from skillet and set aside.
  2. In same skillet, add additional 1 tablespoon butter, cook mushrooms and onion with garlic until tender; stirring often.
  3. Add remaining ingredients. Bring to a boil and return chicken to skillet. Reduce heat, cover and cook over low heat for 5 to 10 minutes or until chicken is cooked through.
