Chili-rubbed Steaks & Pan Salsa

Ingredients
  • 4 (6oz) NY strip steaks (lean, trimmed ⅛")
  • 2 teaspoons chili powder
  • 1 teaspoon kosher salt, divided
  • 2 teaspoons extra-virgin olive oil
  • 4 plum tomatoes, diced
  • 1½ tablespoons fresh lime juice
  • 2 tablespoons chopped fresh cilantro
Instructions
  1. Sprinkle both sides of steak with chili powder and ½ teaspoon salt.
  2. Heat oil in a medium skillet over medium-high heat.
  3. Add the steaks and cook, turning once, 3 to 4 minutes per side for medium.
  4. Transfer steaks to a plate, cover with foil and let rest while you make the salsa.
  5. Add tomatoes, lime juice and the remaining ½ teaspoon salt to the pan and cook, stirring often, until the tomatoes soften, about 3 minutes.
  6. Remove from heat, stir in cilantro and any accumulated juices from the steaks.
  7. Serve the steaks topped with the salsa.
