Sweet Corn, Mango and Black Bean Salad
Ingredients
- 2 cans black beans, drained and rinsed well
- 1 cup frozen mango chunks, thawed and diced
- 1 cup EACH red and green bell peppers and red onion, diced
- 2 cups frozen sweet corn, thawed
- 2 TB fresh basil, chopped OR 1 Teaspoon dried basil
- 1 jalapeno, seeded and diced (optional)
- 2 Tablespoon extra virgin olive oil
- 3 Tablespoon balsamic vinegar
- 1 Teaspoon cumin powder
- Cracked black pepper to taste
Instructions
- Combine first 6 ingredients in a large bowl. Mix together oil, vinegar, cumin and pepper and pour over salad. Refrigerate until ready to eat. ENJOY!
