Hot Fudge Sundae Cake

Ingredients
  • 1 package (18.50 ounces) dark chocolate fudge cake mix, prepared according to package directions
  • 1 gallon Blue Bell Light Vanilla Ice Cream, softened
  • FUDGE SAUCE:
  • 1 (12 oz) can skim evaporated milk
  • 1 cup sugar
  • 4 squares unsweetened chocolate
  • cup butter
  • 1 ½ teaspoon vanilla
  • teaspoon salt
Instructions
  1. Bake cake mix according to package directions in 9x13-inch pan. For best results, line bottom of cake pan with wax paper for ease in removing cake from pan. To remove cake, cool slightly, then turn cake gently out onto wire rack. Allow to cool completely.
  2. Using long-handled, serrated blade knife, slice cake in half horizontally and put bottom layer back into cake pan. Place spoonfuls (using entire carton) of softened ice cream on top of bottom cake layer. Use a spatula dipped in hot water to gently spread ice cream in even layer. Top with remaining cake layer, cut side down onto ice cream. Cover and freeze.
  3. Prepare fudge sauce by combine evaporated milk and sugar into saucepan. Stir constantly on medium heat until the mixture come to a rolling boil. Boil and stir for 1 minute. Add unsweetened chocolate and stir until melted. Beat with wire whisk until smooth. Remove from heat and stir in butter, vanilla and salt.
  4. To serve, cut cake into 16 squares. Spoon hot fudge sauce on top of each cake square. Garnish with dollop of Cool Whip, if desired.
