Fireworks Potato Salad
Ingredients
- 4 cups new potatoes (skin on), boiled and cut into large chunks
- ¼ cup celery, diced
- ¼ cup each red and orange bell pepper, diced
- ½ cup green onion, diced (reserve half for garnish)
- ⅓ cup olives, chopped
- 1 jalapeno, seeded and diced (optional)
- Freshly cracked black pepper to taste (optional)
- ½ cup olive oil and vinegar dressing, your favorite
Instructions
- Combine all ingredients except dressing.
- Pour dressing over mixture and stir to blend together.
- Cover and refrigerate until ready to use.
- Sprinkle reserved green onion over salad before serving.
