Black-Eyed Pea Skillet

Ingredients
- 1 pound 96% lean ground beef
- 1 onion, chopped
- 1 green pepper, chopped
- 2 (16 oz.) can Black-Eyed Peas, drained
- 1 (16 oz.) can diced tomatoes
- 1 teaspoon each of salt and sugar
- ½ teaspoon pepper
- ¼ teaspoon minced garlic
- 3 mini cornbread loaves, split lengthwise and heated, optional
Instructions
- Add remaining ingredients. Bring to a boil, reduce heat and simmer 20 minutes, stirring often. Serve over cornbread, if desired
- Layer with fresh peaches, blueberries over batter and sprinkle evenly with remaining ½ cup sugar.
