Black-Eyed Pea Skillet

Ingredients
  • 1 pound 96% lean ground beef
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 (16 oz.) can Black-Eyed Peas, drained
  • 1 (16 oz.) can diced tomatoes
  • 1 teaspoon each of salt and sugar
  • ½ teaspoon pepper
  • ¼ teaspoon minced garlic
  • 3 mini cornbread loaves, split lengthwise and heated, optional
Instructions
  1. Add remaining ingredients. Bring to a boil, reduce heat and simmer 20 minutes, stirring often. Serve over cornbread, if desired
  2. Layer with fresh peaches, blueberries over batter and sprinkle evenly with remaining ½ cup sugar.
