Grilled Chicken w/Black Bean Salsa
Ingredients
- ¼ cup diced onion
- ½ teaspoon minced garlic
- 1 (14 oz) can black beans, rinsed and drained
- 2 teaspoons ground chipotle chile
- 1 cup chicken broth
- ¼cup diced tomatoes
- 1 teaspoon minced fresh cilantro
- ½ teaspoon salt
- 1 tablespoon olive oil
- 1 tablespoon chili powder
- 1 teaspoon McCormicks Montreal Chicken
- 4 (5 oz) skinless, boneless chicken breast halves
Instructions
- Spray large saucepan with cooking spray. Saute onion and garlic over medium heat until onions are translucent. Add beans, chipotle, broth, tomatoes, and salt; simmer 15 to 20 minutes. Remove from heat and stir in cilantro.
- Puree half the bean mixture in a blender. Add back to beans and mix together.
- Combine olive oil, chile powder and Montreal Chicken seasoning in small bowl; mix to form a paste. Rub paste over chicken breasts.
- Grill or broil chicken 3 to 5 minutes per side; or until no longer pink. Top with black bean sauce.
