Lemon Garlic Grilled Salmon in Foil

Ingredients
- 1 (2-pound) salmon filet
- 4 tablespoons olive oil
- 8 cloves garlic, chopped
- ¼ cup white wine
- 2 tablespoons lemon juice
- Salt and black pepper, to taste
- ¼ cup green onions, sliced
- ¼ cup fresh parsley, chopped
- Lemon wedges, for serving
Instructions
- Preheat grill to medium-high heat, or preheat oven to 375 degrees F. Line a large baking dish with a large sheet of heavy-duty aluminum foil. Place salmon filet in the center and set aside.
- In a small saucepan, heat oil over medium heat. Stir in garlic and cook for 1-2 minutes, until bubbly and fragrant. Remove from heat and stir in wine and lemon juice.
- Pour entire mixture over the salmon, ensuring the filet is evenly coated. Season salmon with a few pinches of salt and pepper.
- Fold together the edges of aluminum foil, making sure the salmon is completely enclosed.
- To cook in the oven, bake for approx. 15 minutes. Carefully open the foil packet so the top of the filet is completely exposed. Change oven-setting to "broil," and return to oven for an additional 3-5 minutes. (Be careful not to let the garlic burn!)
- To cook on the grill, Carefully transfer the packet of salmon to the grill, and grill for 12-14 minutes. (Salmon will be ALMOST cooked through). Carefully open and pull back the aluminum foil so that the top of the fish is completely exposed. Continue cooking for 3-4 minutes, or until the top of the salmon and the garlic are slightly golden and the fish is cooked through.
- Top with green onions and parsley, and garnish with fresh lemon wedges.
