Ingredients
Broiled Flank Steak:
- 1 (2-pound) flank or top sirloin steak (about 1 ¼-inches thick)
- 3 cloves garlic, crushed
- 2 tablespoons Worcestershire sauce
- ½ cup low-sodium soy sauce
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
Chimichurri Sauce:
- 4-5 cloves garlic
- 1 ½ cups fresh parsley, chopped
- ¾ cup fresh cilantro, chopped
- 2 tablespoons fresh oregano leaves (or 1 tablespoon dried)
- 4 green onions, chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon cumin
- ¼ teaspoon red pepper flakes
- 3 tablespoons white wine vinegar
- 2 tablespoons water
- ⅓ cup olive oil
Instructions
- Place steak in a glass baking dish. Using a fork, poke small holes over the surface of the meat, about 2 inches apart. Rub with crushed garlic until well coated. In a small bowl, whisk together Worcestershire sauce, soy sauce, vinegar and olive oil. Pour marinade over the surface of the meat, cover with plastic wrap, and refrigerate for at least 2 hours.
- To prepare the chimichurri sauce, combine all ingredients in a food processor and pulse until finely chopped and well-blended. (It should resemble pesto). Set aside.
- Preheat oven broiler and arrange baking rack to sit about 4-inches from the top of the oven. Lightly grease a broiler pan (or baking sheet). Remove meat from the marinade, allowing some of the liquid to drip off before transferring to the broiler pan. Discard the marinade.
- For medium-rare steak, broil meat for 3-4 minutes; remove from oven, flip, and return to oven for an additional 3 minutes. (You can also use the outside grill, if you prefer). Transfer meat to a cutting board and allow to rest for 5 minutes. To ensure tenderness, slice against the grain of the meat. Drizzle with chimichurri sauce and enjoy!
- Get creative! Enjoy on a spinach salad with queso fresco, on a taco with fresh lime, or simply served with your family’s favorite sides!
Time Saver: If you don't want to prepare your own sauce, chimichurri sauce can be purchased at your closest grocery.
