Ingredients
- 12 slices whole wheat bread
- 1 pint fresh blueberries
- 5 large eggs
- 1 ¼ cup 1% milk
- 2 tablespoons pure maple syrup
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 2 tablespoons unsalted butter, melted
Instructions
- In a 9x9-inch square baking dish, toss together cubed bread and fresh blueberries.
- In a medium-sized bowl, whisk together eggs, milk, maple syrup, cinnamon, and nutmeg. Add melted butter and mix to combine. Pour egg mixture over bread and blueberries. Cover and refrigerate overnight.
- Preheat oven to 350 degrees F. Bake in oven 45-55 minutes, or until set and golden brown. Serve with eggs or your favorite low-fat turkey sausage for a balanced breakfast!
